Applesauce-Nut Bread
(recipe from the American Heart Association)
¾ cup sugar
1 cup applesauce
1/3 cup oil
2 eggs (or 4 egg whites or egg substitute to equal 2 eggs)
3 Tbsp. skim milk
2 cup flour (can use 1 cup white flour, 1 cup whole wheat flour)
1 tsp. baking soda
½ tsp. baking powder
½ tsp. cinnamon
¼ tsp. salt
¼ tsp. ground nutmeg
¾ cup chopped pecans or walnuts
1. In a large mixing bowl, combine sugar, applesauce, oil, eggs, and milk. Mix thoroughly.
2. Sift together the flour, soda, baking powder, cinnamon, salt and nutmeg. Beat dry ingredients into the applesauce mixture until well combined. Stir in the pecans.
3. Pour batter into 9 x 5 loaf pan that has been sprayed with nonstick pan coating.
Topping
¼ cup brown sugar
½ tsp. ground cinnamon
1. Combine the brown sugar and cinnamon. Sprinkle evenly over the batter, and bake at 350 F for about 1 hour. When done, remove from the pan and cool on a rack. This can also be put into mini-loaf pans and will need to cook about 30 minutes. Also works well as mini-muffins and will yield about 24-26 muffins. These will need to cook about 20 minutes.
Yield: 16 slices per large loaf pan
